All Damn Summer Tomato Toast

When tomato season finally rolls around, this is the only thing I want for breakfast. And lunch. And as a snack. This toast pairs extraordinarily well with herby scrambled eggs, as seen above. It is also delicious with some good quality sardines. But truly, the toast stands well all alone.

Give your gorgeous peak-season heirlooms their moment to shine with this amazing and simple tomato toast.

PS: I literally paid $20 for this at a trendy restaurant last night with some friends. Got into the subway and told Hannah, “My favorite thing was that tomato toast… but I think mine is better!” Not to toot my own horn…

Ingredients

  • 1 medium heirloom tomato

  • 2-4 slices of high quality crusty bread

  • 3 tablespoons mayonnaise (I strongly recommend classic Hellman’s)

  • 1 1/2 teaspoons fresh lemon juice

  • 1 small or 1/2 large clove of garlic, finely grated or pressed

  • Flaky salt

  • Pepper

  • Recommended toppings:

    • Aleppo pepper flakes, toasted sesame seeds, fresh chives, basil

Notes, tips, & tricks

Any leftover mayonnaise mixture can be stored in the fridge for ~3 days to be used as desired.


Let’s Do It

Step 1

Slice and put bread in the toaster. While bread toasts, mix mayonnaise, lemon juice, grated garlic, and a few cracks of pepper in a small bowl. Slice tomato into about 1/4-1/2 inch rounds.

Step 2

Remove bread from toaster. Let cool slightly, then spread a healthy amount of mayonnaise mixture onto toast. Top with tomatoes. Finish by sprinkling tomatoes with a good pinch of flaky salt, as well as aleppo pepper, sesame seeds, and/or chopped chives and basil. Consume immediately. Repeat as needed.
