Snacky Blistered Shishitos

Serves 2-4 • Time 15 mins

These shishito peppers are the perfect before meal snack, appetizer, or addition to any dinner party menu. They are a quick and light crowd-pleaser that take no preparation, and look way fancier than they are. Grab a skillet, some flaky salt, and impress yourself!

Ingredients

  • 8 ounces shishito peppers*

  • ~1 tablespoon olive oil

  • Kosher or Maldon salt

  • 1/2 a lemon

  • Cast-iron or heavy bottomed skillet

Notes, tips, & tricks

*The lighter/brighter green the shishito, the sweeter the taste. Darker green peppers, will be more bitter in flavor.

Cooking these peppers can get a little smokey- so cover your fire alarm or open a window in advance!


Let’s Do It

Step 1

Heat a cast iron or heavy bottomed skillet over medium high heat. Toss shishitos and oil in a bowl so that peppers are coated. Cook shishitos in an even layer, turning or tossing occasionally until mostly blistered on all sides.

Step 2

Remove blistered shishitos from pan. Serve on a plate with a very healthy couple pinches of flaky salt and a squeeze of lemon juice. Eat immediately.
