Rhubarb Aperol Spritz

This cocktail was inspired by an incredibly refreshing drink from the delectable Serafina restaurant in Seattle. After we left Seattle, I couldn’t stop thinking about these cocktails. So, I checked their website, did some digging, and came up with this recipe which is as close to what we drank as I could get. Hannah calls it “adult fruit punch, but in a good way!”, I just think it’s the perfect way to cool off on a hot day.

Ingredients

  • 2 oz Aperol

  • 4 oz dry prosecco

  • 1/2 oz Rhubarb liqueur (such as Giffards)

  • 1 oz Blood Orange & Pomegranate San Pellegrino soda

  • Ice


Let’s Do It

Step 1

Fill a large wine glass about half way with ice cubes. Add Aperol, rhubarb liquor and prosecco to glass. Top with soda, and stir. Serve with an orange slice as garnish if you’re feeling fancy.
